The Division of Food Services is excited to launch our recipe series, a quarterly video series where we will be highlighting a healthy recipe that our staff in the field prepares from scratch, that is available to students in full-service cafeterias across the District.

25 cups of Frozen Blueberries
25 Frozen Bananas
6 ¼ cup of 1% Milk
25 cups of Vanilla Yogurt
In a large blender add peeled frozen bananas. Next, add frozen blueberries. Pour in 1% Milk. Lastly, add Vanilla yogurt. Place blender pitcher on base and blend on low for about 1 minute or until smooth. Pour mixture into 12oz serving cups.
2 – #10 can Black Beans
25 cups of Frozen Corn
Mrs. Dash SW Chipotle
½ cup of Seasoning
50 bags of WG Tortilla Chips
1 – 5lb bag of Shredded Cheddar
Cook eggs according to package directions. Drain and rinse black beans. Defrost corn in a colander under cold running water. Rough chop eggs, and reheat with beans and corn just long enough for everything to get hot. Stir in Mrs. Dash SW chipotle seasoning. Open chips and divide half a bag into each cardboard boat. Scoop bean and egg mixture onto each boat of chips. Top with shredded cheese and serve with salsa.
22 pounds of Apple Slices
1- #10 Can- Applesauce
12 cups- Apple Juice
2 cups- Butter
1/4 cup- Cinnamon
6 packets- Maple Syrup
Melt butter. Preheat oven to 350. Combine all ingredients in a mixing bowl or directly in steam table pan. Pour mixture into steam table pan and spread into an even layer. Top with extra cinnamon, if desired. Bake for 30 minutes, or until apples are soft. Serve using a #8 scoop into the black disposable (9947) or scoop directly onto a compostable tray.
This salad contains seven superfoods and has all the crisp and sweet flavors of Autumn in one fresh dish!
4 oz. or about 0.5 cups honey mustard
1.5 cups + 1 Tbsp. red wine vinegar
2.5 cups + 1 Tbsp. + 1 Tsp. canola oil
2 Tbsp. Mrs. Dash salt-free original spice
2 cups apple juice
3 cups craisins
9 # 6 oz. veggie power slaw blend (a blend of golden beets, broccoli stalks, kohlrabi, brussel sprouts, carrots, kale, radicchio)
In a bowl, whisk honey mustard, red wine vinegar, canola oil, Mrs. Dash seasoning, and apple juice. In a large bowl, combine craisins with slaw mix and toss with dressing until evenly coated. Using a #8 solid spoon, serve salad in a 4-oz shallow black dish
